Watermelon Popsicles
One of my daughters’ favorite things about summer is hanging out on the patio with a cool, drippy watermelon popsicle. These popsicles are the perfect fit and couldn’t be any easier to make. One of my favorite things is that I can let them enjoy as many as they want because all they are is fruit! That simple. We love watermelon because it’s so sweet and such a fun summer treat, but any fruit combo will work so experiment with your kiddo’s favorite fruit. I’ve made ones with honeydew, peaches and basil, kiwi and strawberry. And these could easily be made into a fun way to serve refreshing adult drinks for a cocktail party. Just follow the same method, but add in some vodka or rum. Not too much or they won’t freeze as well.
WATERMELON POPSICLES

Ingredients
- 1 seedless watermelon – cut into medium pieces
- Handful of fresh mint (optional)
- Small dixie cups
- Popsicle sticks
Instructions
- Puree watermelon in blender in as many batches as necessary to blend all the watermelon. Add in a few mint leaves to each batch if using mint. Pour into dixie cups. You can make the popsicles as big or as small as you like.
- Place in freezer for about 1-2 hours. Once the watermelon has started to freeze, but is still soft, place one popsicle stick in each cup. If they don’t stay straight, put watermelon back in freezer and wait until the watermelon has set a little more. Freeze until completely solid. Can keep in freezer for about a month (although at our house they rarely last that long!).
